Healthy-ish Oaty Cookies Recipe

These refined sugar free oaty cookies are perfectly crisp, slighty chewy and filled with a yummy sticky centre!




These little cookies are perfect for when you want an easy sweet snack but without too much sugar. They are naturally sweetened with maple syrup and you only need a handful of simple ingredients. Simply mix all your cookie ingredients together and shape into little cookie balls. Add your favourite jam or spread to the middle and bake for just ten minutes until golden and delicious! They're the perfectly balance between crisp and chewy and a great little treat!





This recipe makes a dozen small cookies. They are best eaten within four days while they are freshest. Store in an airtight container in a cool and dry place or freeze for longer. You can use whichever jam or spread you would like for the middle of your cookies. I used Messy Face new sesame fruit spread, but jam, homemade chia jam, chocolate spread, nut butter or Biscoff work well too!


These cookies are dairy free, eggs free and completely plant based. They are naturally gluten free and can be nut free depending on what you fill them with.




Makes 12 small cookies

 

Ingredients;

125g oat flour - see instructions

40g oats

1 tsp cinnamon

1/2 tsp vanilla powder

1 tsp baking powder

60g melted coconut oil or oilve oil

60g maple syrup

6 tsp jam or spread of your choosing

 

You will also need; a mixing bowl, spoon or ice cream scoop, baking tray, baking paper, food processor or blender


How to make your cookies;

  1. Pre heat the oven to 180°c and line baking tray with baking paper, this will stop your cookies from sticking

  2. Make your oat flour by adding the oats to your food processor and pulsing until roughly ground.

  3. Add the oat flour and all the other cookie ingredients to a mixing bowl and mix together until you have a crumbly dough

  4. Use a spoon or ice cream scoop to make 12 even balls of cookie dough and spread them out on your baking tray

  5. The dough is very moist and crumbly, so just shape the cookies as best you can in a little circle shaped patty

  6. Use the back of the spoon or your fingers to make a little indent in the middle of each cookie

  7. Add 1/2 tsp of jam or spread of your choosing to the middle of each cookie

  8. Bake for 10 minutes until lightly golden brown

  9. Leave on the tray until the cookies are cool enough to handle

  10. Now your cookies are ready to eat!

  • I used Messy Face's yummy new sesame and fruit spreads for the filling in my cookies, but any jam or spread would work (gifted)

  • Make sure your oats are marked gluten free if needed, but the recipe is naturally gluten free

  • If you're not a fan of cinnamon, you can just leave it out or swap for another spice
