Healthy-ish No Bake Chocolate Brownie Recipe

There are just six simple ingredients in these delicious healthy-ish no bake brownies! Perfect for when you're craving a chocolatey treat but you don't want to turn the oven on!



These delicious healthy-ish brownies are a super simple no bake recipe. They’re naturally dairy free, egg free and gluten free but you’d never guess as they’re so tasty! They have a fudgy brownie texture and are topped with the perfect amount of dark chocolate to make them really indulgent! The recipe is really adaptable, as you could switch up the gut powder or protein powder that you add or use different nut butters to make different flavours.



These healthy-ish no bake brownies are best stored in an airtight container in a cold place and eaten within one week. I use a 2lb loaf tin to make these brownies which makes 8-10 slices.



Makes around 8-10 slices

 

Brownie Ingredients;                    

100g almond flour

50g chocolate Biomel Complete Gut or chocolate protein powder

1 tbs cocoa powder

70g nut butter (I used chocolate sunflower seed butter but any will work)

60g maple syrup

1 tbs cold water - if needed

75g dark chocolate

1 tsp coconut oil - if needed

Sprinkles - optional

 

You will also need; 2lb loaf tin, baking paper, mixing bowl, spoon, small microwaveable bowl



How to make your brownies;


  1. Line your loaf tin with baking paper. This will make it easier to remove the cookie bars from the tin once they're set

  2. Add the almond flour, chocolate Biomel powder, cocoa powder, maple syrup and nut butter into a bowl and mix together to form a thick cookie dough

  3. It is a stiff dough, but if the mixture is not coming together smoothly add a tbs of cold water. It’s probably easier to use your hands to bring the dough together!

  4. Use your hands to press the mixture evenly down into the lined loaf tin

  5. In a small microwavable bowl, add the dark chocolate and coconut oil, then gently heat in short bursts stirring in between. The oil just helps to thin the chocolate a little so it cuts neater once it's set

  6. Spread the melted chocolate on top of the cookie dough and decorate with sprinkles if you would like

  7. Pop the loaf tin in the fridge until the chocolate has set

  8. Slice the cookie into 8-10 small bars and now they're ready to eat!

  • I used Biomel Chocolate Complete Gut powder for an extra fibre and vitamin boost (gifted)

  • I used Moo Free dark chocolate and Sunfly chocolate sunflower seed butter

  • Any nut butter and protein or fibre powder will work!
