Pistachio Chocolate Dates Recipe

A deliciously simple, no-bake, healthy-ish treat with only four ingredients!



This recipe makes around 12 pistachio butter filled, chocolate covered dates. The perfect quick treat for when you need a sweet fix but don't want all the sugar.



These chocolate covered dates are so yummy freshly dipped in chocolate when they're all gooey, but I actually prefer them after they've set in the fridge for a bit. The cold chocolate makes a lovely crunchy shell to the sweet date and pistachio butter filling.



Makes around 12 filled pistachios

 

Ingredients;                    

12 dates

6-8 tsp pistachio butter

80g dark chocolate

1 tsp olive or vegetable oil

10g finely chopped pistachios

 

You will also need; a microwavable bowl, a spoon, baking paper lined tray, sharp knife, fork



How to make your chocolate covered dates;

  1. Carefully cut open your dates and remove the stone if needed

  2. Place 1/2 - 1 tsp of pistachio butter inside each date and gently squeeze closed

  3. Carefully melt the chocolate in the microwave in 30 second bursts stirring in between

  4. Add the tsp of oil to the chocolate and stir together. This will help keep the chocolate glossy

  5. Drop each date into the melted chocolate and use a fork to shake off the excess

  6. Place the date on the baking paper lined tray

  7. Sprinkle with the chopped pistachios for extra crunch

  8. Repeat covering each filled date with the melted chocolate and sprinkling the chopped pistachios on top

  9. Eat straight away or pop in the fridge for the chocolate to set


Tips & Tricks!

  • You could use any nut butter for the date filling, peanut butter also works really well!

  • I like to cover my dates in dark chocolate but vegan ‘milk’ or white chocolate would work as well
