Beetroot ‘healthy-ish’ Brownies Recipe

Easy brownies made with natural sugar and hidden veg! The perfect 'healthy-ish' chocolate treat for you and for toddlers.



This recipe makes a yummy and fudgy brownie which still gives you a chocolatey hit without as much sugar as a regular brownie and the bonus of extra vegetables!


It’s the perfect bake for toddlers to help with the mixing and so they can have a sweet treat without a huge sugar rush.



This brownies makes around 12 regular or more smaller toddler sized bites. Store in the fridge for around 5-7 days or freeze for longer.



Makes around 12 regular slices or 24 toddler sized bites

 

Ingredients;                    

200g flour

15g baking powder

50g cocoa powder

75g olive or vegetable oil

150g plant milk - I used soya

100g maple syrup

250g cooked beetroot

2x medium-large bananas

Optional - handful of chocolate chips to top



You will also need; a mixing bowl, a spoon, a whisk, baking paper, 7” x 11” baking tin, food processor or blender



How to make your beetroot brownie;

  1. Pre-heat your oven to 180c and line your baking tin with baking paper to stop your brownie from sticking

  2. Place your beetroot and peeled bananas in your food processor and blend until smooth. Set aside until needed

  3. Add all the dry ingredients to your mixing bowl, flour, baking powder, cocoa powder and roughly mix together using your whisk

  4. To the mixing bowl, add the blended banana and beetroot mixture, olive oil, maple syrup and plant milk, then mix together thoroughly

  5. Pour the mixture into the lined baking tin

  6. Sprinkle a handful of chocolate chips on top for an extra chocolatey kick if you'd like

  7. Bake for 20-25 minutes until you can gently press your finger on the top

  8. Set aside until completely cool before slicing. If you cut the warm brownie it will crumble. I like to put my brownie in the fridge for a few hours to fully chill through to get cleaner slices

  9. Eat and enjoy!




Tips & Tricks!

  • Adding the chocolate chips is completely up to you. The brownie still tastes delicious without them and you may want to leave them off for smaller children
