Healthy-ish Strawberry & White Chocolate Cookie Bars Recipe

A healthy-ish no bake cookie bar recipe with just seven simple and healthy ingredients!


These delicious healthy-ish cookie bars are a super simple no bake recipe. They’re naturally dairy free, egg free and gluten free but you’d never guess as they’re so tasty! The almond flour and vegan protein powder gives the cookies a yummy cookie dough like texture and a light vanilla flavour, with a lovely fruity bite from the strawberry pieces and of course, just enough chocolate topping to make them really indulgent!


These healthy-ish no bake cookie bars are best stored in an airtight container in a cold place and eaten within one week. I use a 2lb loaf tin to make these cookie bars which makes 8-10 scooping bar slices.


Makes around 8-10 slices
Vanilla dough Ingredients;
100g almond flour
50g vanilla protein powder
70g nut butter (almond or cashew work well)
60g maple syrup
12g freeze dried strawberry pieces + extra for decoration
1 large white chocolate bar
1 tsp coconut oil
You will also need; 2lb loaf tin, baking paper, mixing bowl, spoon, small microwaveable bowl
How to make your cookie bars;
Line your loaf tin with baking paper. This will make it easier to remove the cookie bars from the tin once they're set
Add the almond flour, vanilla protein powder, maple syrup and nut butter into a bowl and mix together to form a thick cookie dough
Add the freeze dried strawberries and fold them through the mixture
Use your hands to press the mixture evenly down into the lined loaf tin
In a small microwavable bowl, add the white chocolate and coconut oil, then gently heat in short bursts stirring in between
Spread the melted chocolate on top of the cookie dough and sprinkle over some extra freeze dried strawberry pieces for decoration
Pop the loaf tin in the fridge until the chocolate has set
Slice the cookie into 8-10 small bars and now they're ready to eat!


Tips & Tricks!
I used Earth Champ vanilla plant based protein powder (gifted)
I used Ombar white chocolate and Pip & Nut almond butter
Any nut butter will work!

You could make these cookie bars in lots of different flavours! Freeze dried raspberry pieces would also taste delicious or you could swap your nut butter to peanut butter for a pb & jelly style cookie bars!
