No Scales Needed Mini Chocolate Cupcakes Recipe

All you need are a tablespoon and a teaspoon to create these cute and yummy mini chocolate cupcakes!



Create the easiest and most delicious mini chocolate cupcakes without the need for weighing scales! Simply use your tablespoon and teaspoon to measure out your ingredients, mix them up and pop them in the oven to bake for just 10 minutes. Once they're cooled, add a blob of easy chocolate icing and decorate, then they're ready to eat. They're quick, delicious and the perfect bite sized treats!



This recipe makes a dozen mini cupcakes. They are best stored in an airtight container in a cool and dry place and eaten within four days.



Makes 12 mini cupcakes

 

Sponge ingredients;

4 tbs plain flour

4 tbs caster or granulated sugar

2 tsp cocoa powder

1 tsp baking powder

4 tbs oil

8 tbs plant milk

1 tsp vinegar


Icing ingredients;

6 tbs icing sugar

1 tsp cocoa powder

2-3 tbs boiling water

 

You will also need; a mixing bowl, a 12 hole mini cupcake tin, 12 mini cupcake cases, tablespoon, teaspoon, ice cream scoop - optional, piping bag - optional


How to make your cupcakes;

  1. Pre heat your oven to 160c and add the mini cupcakes cases to your mini muffin tin

  2. Make the sponge batter. Add all the dry ingredients to your mixing bowl and roughly stir through

  3. Add the oil, plant milk and vinegar and mix again until there are no lumps of flour. Do not overmix as this will make the cupcake loose their fluffy texture

  4. Use a spoon or ice cream scoop to evenly add the mixture to the mini cupcake cases

  5. Bake for around 10 minutes until the cupcakes are dry to touch and a cocktail stick comes out cleanly

  6. Leave the cupcakes to cool then make the easy icing

  7. Add the icing sugar and cocoa powder to a bowl and add the boiling water slowly, one tbs at a time, while mixing thoroughly until you have a smooth icing

  8. Spoon a small blob on top of each cupcake or use a piping bag, then decorate with vegan sweets or sprinkles. I added vegan smarties to make little bunny faces on mine for Easter!

  9. Now they're ready to eat!
