Mini Gingerbread People Biscuits Recipe

The cutest mini gingerbread people! A soft spiced gingerbread biscuit perfect for cutting out festive shaped cookies.

This recipe makes a soft textured gingerbread biscuit with a slightly crisp outside and a soft spiced centre. The dough comes together really quickly and there's no need to chill it. Just cut out your festive cookie shapes and bake! You could also add extra decorations with vegan royal icing if you're feeling extra fancy!

This recipe makes enough dough for around 70 mini (1" high) gingerbread people or you could make fewer larger cookie shapes.

Makes 70 mini gingerbread people or fewer larger shapes

 

Ingredients;

160g plain flour

65g soft brown sugar

10g baking powder

1 tbs (12g) ginger powder

30g vegan butter

25g golden syrup

50g plant milk

 

You will also need; a mixing bowl, a baking tray, baking paper, rolling pin, festive cookie cutters, small microwavable bowl


How to make your gingerbread people;

  1. Pre heat the oven to 180°c

  2. Line your baking tray with baking paper, this will make sure your biscuits don't stick

  3. In your large mixing bowl add the flour, sugar, baking powder and ginger powder and roughly mix together

  4. Melt your golden syrup and vegan butter together in the microwave by heating in small blasts and stirring in between

  5. Add the melted ingredients and around half the plant milk to the dry ingredients and mix together

  6. Continue adding the plant milk a little at a time until you have a smooth, soft dough. If your dough feels too wet, add a little more flour. If it feels too dry add a splash of plant milk

  7. Bring the dough together by gently squashing it into a ball

  8. Try not to overwork the dough as this will make the biscuits chewy

  9. Flour your worktop and rolling pin so that the dough does not stick

  10. Roll out your biscuit dough to around 3-4mm thick

  11. Cutout your cookie shapes and place them on the lined baking tray

  12. Repeat gently squashing your dough scraps together and then re-rolling until you have used up all the dough

  13. Bake for around 12 minutes until they have slightly puffed up and are golden

  14. Leave to cool then eat and enjoy!

Tips & Tricks!

  • I used a very old mini gingerbread cutter that I had but you could use this recipe to make any shaped gingerbread biscuits

  • If you make larger biscuit shapes, they may need a few extra minutes in the oven to bake through in the middle
