With only two ingredients, these ice creams are a great healthy-ish snack for warmer days!

This recipe makes a deliciously simple strawberry yoghurt ice cream. You simply mix mashed strawberries into thick vegan yoghurt and pop the ice cream in the freezer until set. They taste wonderfully creamy but not overly sweet and make the perfect sunny afternoon snack for both little ones and adults.

This recipe makes four mini ice creams. My mini ice cream moulds and sticks are linked below. Store in the freezer for up to one month.

Makes 4 mini ice creams
Ice cream ingredients;
2 tbs thick style vegan yoghurt
4-5 small strawberries + 2 extra for decoration
You will also need; a small bowl, 4 lolly pop sticks, mini ice cream mould, spoon, chopping board, knife and fork
How to make your ice creams;
Wash your strawberries then roughly chop 4-5 small berries into pieces
Use a fork to mash them into a chunky puree
Add 2 tbs of a thick protein or Greek style vegan yoghurt
Mix together then evenly add the mixture to the mini ice cream mould
Add the lolly pop sticks and decorate the top of the ice creams with more pieces of chopped strawberry
Put the ice cream mould in the freezer for at least one hour until the ice cream has set
Now they are ready to eat!

Tips & Tricks!
I used Nush almond protein yoghurt. A thicker style yoghurt works better so that the ice cream mixture is not too runny

Make sure you use food safe lollypop sticks as some are just for crafting. I used these; https://amzn.to/4aTxWYF
