The Easiest Vegan Lemon Curd Recipe

Lemon curd is one of the most delicious spreads! Perfect for swirling into oats, spreading on toast, filling cakes or just eating by the spoonful!




Did you know that you don't need eggs to make lemon curd! This vegan lemon curd recipe needs just five ingredients and a few minutes stirring to make the most incredible, thick, glossy and smooth lemon curd. It's sweet and velvety with just the right amount of sharpness. Simply melt your ingredients together, carefully stir in your plant milk mixture and mix until creamy.





This recipe makes one small batch of vegan lemon curd and it is incredibly easy to double or triple the recipe to make larger batches. It needs to be kept in the fridge and is best eaten within a week. It's perfect for filling cakes, making lemon tarts or just spreading straight onto a slice of toast.





Makes one small batch of lemon curd

 

Curd ingredients;                    

40g vegan butter

45g caster or granulated sugar  

Juice of 1 medium lemon + optional zest

15g cornflour

15g plant milk

 

You will also need; a small saucepan, bowl, whisk


How to make your lemon curd;

  1. Add the vegan butter, sugar and lemon juice to a small pan and begin to melt together on a low-medium heat

  2. If you would like to you can also add the zest from the lemon or you can keep the curd smoother by only adding the lemon juice

  3. In a bowl, whisk together the cornflour and plant milk to make a thick but smooth paste

  4. Once everything in the saucepan has melted together and all the sugar has dissolved, begin to add the cornflour mixture

  5. Slowly pour the cornflour mixture into the saucepan, pour towards the side not into the hot middle of the pan. As you pour, continuously whisk the lemon curd mixture

  6. Continue stirring the mixture for a few more minutes until you can feel it start to thicken. Do not let the mixture boil and do not stop whisking! If you do, the cornflour mixture will not dissolve evenly and you may end up with lumps in your lemon curd

  7. Once the lemon curd is thick and glossy, pour into a small container and leave to cool

  8. Once cooled, your lemon curd is ready to eat!




Tips & Tricks!

  • This recipe is based on just using one lemon, but you can easily double or triple the recipe to make larger batches

  • You can use this recipe to make lots of other fruit curds! Substitute 1 lemon for 1 orange, 2 limes or 3 passion fruits
