Strawberry Cream Puffs Recipe

A deliciously simple recipe for strawberries and cream filled pastry hearts.

This recipe makes nine yummy pastry hearts filled with strawberry jam, vegan whipped cream and fresh strawberry slices. They come together really quickly and are ready to eat as soon as you're done.

These pastries are best eaten on the day of baking but will keep in the fridge for a day or two, although the pastry will soften over time.

Makes nine pastry hearts

Pastries ingredients;

1x sheet of ready made puff pastry

9 tsp strawberry jam

6-9 fresh strawberries - washed and thinly sliced

1 carton of vegan whipping cream

4-5 tsp white granulated sugar

2 tbs plant milk

2 tbs icing sugar for dusting - optional

You will also need; an electric whisk, a spoon, medium sized heart shaped cookie cutter, baking tray, baking paper, mixing bowl, pastry brush, small sieve, sharp knife, piping nozzle - optional, piping bag - optional

How to make your pastries;

  1. Preheat your oven to 180c and line your baking tray with baking paper

  2. Unroll your ready made puff pastry and cut out as many heart shapes as will fit using your heart cookie cutter. I managed to get nine medium sized heart shapes

  3. Place the pastry hearts onto the baking paper covered tray

  4. Use the pastry brush to lightly cover the top of each pastry heart with plant milk, then sprinkle a pinch of granulated sugar on top of each pastry heart

  5. Bake for around 12 minutes until the pastry has puffed up and is lightly golden

  6. While the pastry cools, make your whipped cream by pouring the whipping cream into a mixing bowl and whipping with an electric mixer on high until the cream is thick and fluffy. Set aside until needed

  7. Once the pastry hearts are cool, use a sharp knife to carefully slice each pastry in half, so that you end up with two heart shaped halves

  8. Spread a teaspoon of strawberry jam over the bottom half of each pastry

  9. On top of the jam, spread with the back of a spoon or use a piping bag to pipe a layer of whipped cream

  10. On top of the whipped cream, add a layer of the thinly sliced fresh strawberries

  11. Once all your layers are done, add the pastry top back on to each pastry heart

  12. If you would like, you can give the pastries a light icing sugar dusting

  13. Now your pastries are ready to eat!

Absolutely LOVED making these for my friends for a Galentine's treat! Thank you for the lovely recipe, Clemie! It was so easy to follow + make. My friends thought they were delicious (as well as cute!) too. I can't wait to follow along with another Clemie recipe - they're the best!
