Halloween Chocolate School Cake Recipe!
An easy and fun and deliciously spooky bake to make this Halloween!

Sheet cakes are a great easy bake and this chocolate school cake is incredibly simple to make!
Just add all your sponge ingredients together in one bowl and mix up your yummy chocolate cake batter. Once your rich and fluffy chocolate sponge is baked to perfection, mix up your easy chocolate hot water icing and spread it all over the top. Now you can get creative with your Halloween themed sweet, treats and decorations!
You just need one mixing bowl and a baking tin, and there's no need for an electric mixer or any fancy equipment.

The cake is best eaten within about four days while it is freshest. Store in an airtight food container in a cool and dry place. You can also freeze the whole cake or slices of cake for longer.
This recipe makes one 7" x 11" sheet cake, but you could also adapt the recipe to make mini school cake cupcakes or a large loaf cake.
I used black cocoa powder in my bake for a spookier, Halloween chocolate cake, but regualr cocoa powder works just as well!
It's dairy free, egg free, nut free, easily gluten free, and of course, completely plantbased.

Makes one 7" x 11" sheet cake
Sponge ingredients;
200g plain flour
225g white granulated sugar
5g baking powder
8g baking soda
75g black or regular cocoa powder
370g plant milk
140g sunflower oil
10g cider vinegar
Topping ingredients;
300g icing sugar
2 tbs black or regular cocoa powder
60g boiling water
Halloween themed sweets, chocolates, sprinkles, biscuits or whatever you'd like to decorate your cake with!
You will also need; a mixing bowl, 7" x 11" baking tin, baking paper, whisk or spatula, jug or large glass, spoon,
How to make your cake;
Preheat the oven to 160°C / 320°F and line the baking tin with baking paper, this will make sure your cake does not stick
In a jug, make the plant milk mixture by adding the plant milk to the vinegar. Set aside
In a mixing bowl, add in the flour, sugar, cocoa powder, baking soda and baking powder. Use a whisk to mix together
Add the sunflower oil and plant milk mixture to the dry ingredients in the mixing bowl and whisk again making sure there are no lumps of flour
Pour the mixture into the lined baking tin
Bake for around 20-25 minutes until lightly golden and a cocktail stick comes out clean
Leave until completely cool and clean your mixing bowl
Once your cake is cooled, make the hot water icing. Add the icing sugar, cocoa powder and boiling water to the mixing bowl and stir thoroughly until you have a smooth, thick but spreadable icing. If your icing is too runny, add a little more icing sugar, and if it is too thick, add a little more water
Gently spread the icing all over the top of the cooled cake using the back of a spoon or a palette knife, then decorate with plenty of spooky sprinkles and small Halloween themed sweets
Leave the cake in a cool, dry place for the icing to set, as this will make it easier to cut neat slices
Now your cake is ready to slice and eat!

Tips & Tricks!
Take care not to overmix the sponge batter, as this can make your cake chewy and dense. Just mix until there are no flour lumps
To make this cake gluten free swap to a gluten free flour and add 1g of xanthan powder to every 100g of flour

I used black cocoa powder in my sponge and icing to make a darker, spookier chocolate Halloween themed chocolate cake. The recipe will work perfectly with regular cocoa powder instead though. Black cocoa powder has a rich and less sweet taste than regular cocoa powder, it tastes like Oreo cookies! This is the one I used; https://link.amazon/B08Yj5fVz
