Digestive Biscuits Recipe

Not too sweet and perfectly crisp! These digestive biscuits are a tasty and easy, quick one bowl bake with only five ingredients!


Digestive biscuits are a British classic! Made with wholemeal flour for a richer and nuttier flavour, they're not overly sweet and make a great afternoon snack! Simply crumble all your ingredients together in one bowl, roll your dough and cut out your biscuit shapes to bake.
They're yummy as they are or you can add chocolate chips, sultanas, orange zest to the dough. Or once they're baked dip them in chocolate or make gooey s'mores!


This recipe makes twenty four individual biscuits. They are best eaten within a week while they are freshest. Store in an airtight container in a cool and dry place or freeze for longer.
They're dairy free, egg free, nut free, and of course, completely plant based!


Makes 24 biscuits
Ingredients;
240g wholemeal flour
80g icing sugar
1 tsp baking powder
120g vegan block butter
40-50g plant milk - as needed
You will also need; a mixing bowl, baking tray, baking paper, rolling pin, 2" round cookie cutter or cutter of your choosing
How to make your biscuits;
Pre heat the oven to 180°c and line your baking tray with baking paper
Add the flour, icing sugar, baking powder and butter to your mixing bowl and crumble them together using your finger tips until you have a fine breadcrumb like mixture
Add around half the plant milk and start to bring the dough together in a ball with your hands
If the dough feels too dry, add a little more milk. You should have a smooth and soft dough but it shouldn't feel wet. How much milk you need will depend on which vegan butter you use, as some are much wetter than others
Lightly dust your worktop with flour and use a rolling pin to roll out your dough to around 3-4mm thick
Cut out your biscuit shapes and place them on the baking paper lined tray, making sure to leave spaces in between
Re-roll any cutoff dough until you have used it all up
Bake for around 15-20 minutes until turning golden. The biscuits should look and feel dry underneath. If they are still wet, they need longer in the oven
Leave to cool and now they're ready to eat!

Tips & Tricks!
Digestive biscuits are delicious by themselves, but you could also dip them in chocolate to make chocolate covered digestives, or sandwich them together with different fillings
I used my digestives to make oven baked s'mores!
