Why do vegans eat plant based sausages and other faux meats?

I often see comments asking why vegans eat foods that imitate meat, like plant-based chicken nuggets or sausages, if they don't believe in eating animal products.  I think there are lots of different answers to that question, but for most vegans, going plant-based isn't about disliking the taste of meat.  It's about ethically disagreeing with using animals for food.  Plant-based alternatives let people enjoy familiar flavours and textures without using animal products.


Faux meats also make it really easy to recreate meals you enjoyed before going vegan.  Which can be especially helpful when you're first transitioning to a more plant-based way of eating, because you can still cook many of your favourite dishes by simply swapping the meat for a plant-based alternative.


There's also an ongoing debate about whether vegan sausages should be called sausages or whether plant-based burgers should be called burgers.  But let's be honest, beef burgers don't come from a cow in a perfect round patty and sausages don't naturally come out of a pig shaped like neat little cylinders.  Words like "burger," "sausage," and "nugget" describe the style of the food, not necessarily what it's made from.
