40g vegan butter

45g caster or granulated sugar

Juice of 2 limes + optional zest

15g plant milk

You will also need; a small saucepan, bowl, whisk

How to make your lime curd;

  2. If you would like to you can also add the zest from the lime or you can keep the curd smoother by only adding the lime juice

  3. In a bowl, whisk together the cornflour and plant milk to make a thick but smooth paste

  4. Once everything in the saucepan has melted together and all the sugar has dissolved, begin to add the cornflour mixture

  5. Slowly pour the cornflour mixture into the saucepan, pour towards the side not into the hot middle of the pan. As you pour, continuously whisk the lime curd mixture

  6. Continue stirring the mixture for a few more minutes until you can feel it start to thicken. Do not let the mixture boil and do not stop whisking! If you do, the cornflour mixture will not dissolve evenly and you may end up with lumps in your curd

  7. Once the lime curd is thick and glossy, pour into a small container and leave to cool

  8. Once cooled, your lime curd is ready to eat!
