Chocolate Dipped Gingerbread People Cakes Recipe

Perfectly spiced gingerbread cake dipped in a rich chocolate covering. The most delicious festive treat!




These little gingerbread people cakes are so easy and fun to make! You just need to bake a gingerbread sheet cake, then use a cookie cutter to cut out the little people shapes before covering them in chocolate and decorating them.



This recipe makes six little gingerbread people cakes and you can use the leftover sponge to make cakepops or as the base of a trifle! They will stay fresh for around 4-5 days in an airtight container or you can freeze them for longer.



Makes 6 little gingerbread people cakes

250g vegan dark or 'milk' chocolate

1 tbs vegetable shortening or melted coconut oil

25g vegan white chocolate

Vegan smarties or small sweets for decorating

 

You will also need; a microwavable bowl, spoon, fork, knife, baking paper, gingerbread person cookie cutter, piping bag


How to make your cakes;

  1. Using a sharp knife, carefully level the top of your cold sheet cake sponge so that it is nice and flat

  2. Use your gingerbread cookie cutter to cut out the people shapes from the sponge. I got 6 from my sponge, but you may get more or less depending on how big your cutter is

  3. Spread out a sheet of baking paper ready to place the chocolate covered shapes on to - this is where it gets a little messy!

  4. Add the dark chocolate and vegetable shortening to a microwavable bowl and heat gently in the microwave in 30 second bursts, stirring in between, until it is all melted together

  5. Carefully balance the first gingerbread sponge shape on your fork and using a spoon, cover the sponge shape in the melted chocolate

  6. Gently place the chocolate covered gingerbread person cake on the baking paper to set and repeat, covering all the sponge shapes in the melted chocolate

  7. Melt your white chocolate in the microwave, by heating in short bursts and stirring

  8. Add the melted white chocolate to a piping bag and pipe on the gingerbread people's eyes, mouth and any details you would like

  9. Decorate your gingerbread people cakes by using vegan smarties or small sweets for their buttons

  10. Leave to set in the fridge for 15-20 minutes, then eat and enjoy!


Tips & Tricks!

  • Vegetable shortening is an 100% vegetable fat spread with no added water. I use Trex brand

  • If you don't like dark chocolate, you could dip them in white chocolate instead

  • I use my last bag of Doisy & Dam smarties (RIP), but any small sweet like Jelly Tots would work for the buttons
