Can people tell when a cake is plant based?

My hot take, they can’t! No one is looking for eggs when they’re eating cake.





“My hot take as a vegan baker: most people can’t tell when a cake is vegan!  Welcome to my Wednesday thoughts!


Some people love to tell you that vegan baking just doesn’t taste as good as baking with dairy and eggs.  But from my experience, most people actually can’t taste the difference!


I’ve made thousands of cakes throughout my years as a professional baker and a huge number of those were eaten and enjoyed by non-vegans.  Many of them had absolutely no idea that the cake they were eating was completely plant-based.


When someone takes a bite of cake, they’re not thinking, “Hmm, I can’t taste any eggs in this.”  They’re thinking, “Is it moist? Is it fluffy? Is it delicious?”  That’s what people actually notice.


The problem is that a lot of people have tried one bad vegan cake and decided that all vegan cakes must taste the same.  That’s like eating one dry chocolate cake and deciding all chocolate cake is terrible.


Good baking is about technique, flavour and quality ingredients.  If a cake is dry, dense or bland, that’s not because it’s vegan.  It’s because it wasn’t made well.


My cakes are completely plant-based, but they’re not just for vegans.  They’re for anyone who loves great cake!


So my hot take is this: most people don’t actually care whether a cake is vegan.  They care whether it’s delicious!”
