Vegan Pistachio Microwave Mug Cake

This microwave mug cake is scarily easy to make! A fluffy vanilla sponge with pistachio butter swirl and pistachio chocolate chunks.



This recipe makes one super simple pistachio microwave mug cake. Just mix your ingredients together, add in some pistachio chocolate pieces and heat for just 60 seconds in the microwave to make the quickest, yummiest vanilla and pistachio mug cake.



The cake comes together so quickly and tastes incredible warm and gooey straight out of the microwave. You could even add a scoop of vegan ice cream on top if you're looking for an extra special treat!



Makes one microwave mug cake

 

Ingredients;                    

3 tbs plain flour                       

2 tbs white sugar

1 tbs pistachio butter

1/2 tsp baking powder

1/4 tsp vanilla powder

1 tbs sunflower or vegetable oil

4 tbs plant milk

Handful of chocolate chips or chopped pistachio chocolate - optional

Handful of chopped pistachios - optional

 

You will also need; a mug, a spoon



How to make your mug cake;

  1. Add all the dry ingredients to your mug and give them a quick mix, flour, sugar, baking powder and vanilla powder

  2. Add the wet ingredients and mix again to make sure everything is combined, oil and plant milk

  3. Add a handful of chopped pistachios and chopped pistachio chocolate pieces or plain chocolate chips and gently mix through - save a few to add to the top once baked!

  4. Add a tbs of pistachio butter to the centre of your mixture and gently swirl through

  5. Microwave on full power for around 60 seconds. The shorter you microwave for the gooier your cake will be, and the longer you microwave for, the more spongy your cake will be

  6. Once cooked, add a drizzle more pistachio butter on top and your extra pistachio chocolate and nuts and it's ready to eat!

  • The shorter you microwave for, the gooier your cake will be and the longer you microwave for, the more spongy your cake will be

  • A scoop of vegan ice cream on top really levels up your mug cake!
