Strawberry & White Chocolate Condensed Milk Cookies Recipe

A deliciously sweet strawberry and white chocolate chip cookie with a yummy chewy texture.

These cookies are so sweet and delicious, with a yummy natural strawberry flavours and delicious white chocolate chips. I made lots of small cookies, but you could make fewer larger cookies or half the recipe.

These cookies will last around a week in a food container or you can freeze them for longer and just defrost them when you fancy a sweet treat!

Makes 40 small cookies
Ingredients;
230g vegan butter
100g granulated or caster sugar
200g condensed milk
1/2 tsp vanilla powder
2 heaped tbs freeze dried strawberry powder
1 tsp baking powder
260g plain flour
200g white chocolate chips
You will also need; a baking tray, baking paper, mixing bowl, small ice cream scoop or teaspoon
Method;
Preheat your oven to 180c
In your mixing bowl, mix together the vegan butter and sugar until light, fluffy and creamed
Add your flour, baking powder, vanilla powder, strawberry powder and condensed milk and mix again until everything is combined
Add the chocolate chips and gently mix through until you have a smooth, soft dough
Using a small ice cream scoop or teaspoon, scoop little balls of dough and place them on the papered baking tray. Make sure that you leave plenty of room for the cookies to spread in the oven
Put the trays of cookies into your fridge to chill for around 20 minutes before baking. This helps them hold their shape more in the oven
Bake for around 8-10 minutes until they are lightly golden
Remove the from the oven and tap firmly on your worktop. This releases any air bubbles and helps your cookies to have a chewier texture
Leave the cookies to cool completely, then eat and enjoy!

Tips & Tricks!
You could swap the freeze dried strawberry powder in this recipe for another freeze dried fruit, such as blueberry powder, raspberry or cherry! I used freeze dried strawberry powder from Honeyberry. You could also swap the white chocolate chips for dark or 'milk' chocolate chips
Chilling the dough before baking helps the cookies to keep their shape more when baked
If your cookies have spread a lot in the oven, white they are still hot, use a large circle cookie cutter to swirl around the edge of each cookie and shuffle the dough into a more circular shape.
