Soft Pumpkin Spiced Cookies Recipe

Makes 8-10 biscuits

 

Ingredients;

250g plain flour

100g soft brown sugar

16g baking powder

1 tsp cinnamon

1 tsp ground ginger

¼ tsp all spice – or sub for mixed spice

¼ tsp cloves – or sub for mixed spice

40g golden syrup

80-90g plant milk

Green food colouring

½ tsp cocoa powder

 

You will also need; a baking tray, baking paper, large mixing bowl, a whisk, two small bowls, spoon or ice cream scoop


1.       Preheat your oven to 160°c

2.       In a large mixing bowl, add the flour, sugar, baking powder and spices and roughly mix together

3.       Add the syrup and plant milk and bring the mixture together to form a smooth, soft dough – it is quite sticky

4.       Separate out two spoonfuls of the dough into two small bowls and set aside

5.       Use a spoon or ice cream scoop to scoop out the remaining dough to make 12-15 small balls

6.       Use your hands to roll these into smooth balls and press down slightly to make a round pumpkin shape

Add the cocoa powder to one of the small bowls of dough and mix in

7.       Using the brown dough, make little balls and squash them on to the top of each of the circle pumpkin shapes to make the pumpkin stems

8.       Add a dark green food colouring to the remaining small bowl of dough and mix in

9.       Use the green dough to roll small balls and shape into leaves.  Gently press them onto the pumpkin shapes

10.       You could also roll thin sausage shapes and curl them around the make the pumpkin vines

11.       Bake for around 15 minutes until lightly golden and the tops feel dry and firm to touch

12.       Eat and enjoy!
