S’mores Cookie Stuffed Croissant Recipe

A deliciously yummy combination of croissant, cookie dough and marshmallows!

Makes two filled croissants

 

Ingredients for cookie dough;

80g plain flour

35g soft brown sugar

30g white granulated sugar

½ tsp baking powder

¼ tsp baking soda

25g vegan butter

¼ tsp vanilla powder

40g dark chocolate chunks

1-3 tsp cold water

 

You will also need 2x vegan croissants and 3x large vegan marshmallows chopped in half

 

You will also need; a baking tray, baking paper, mixing bowl, serrated knife


Method;

1.     Pre heat your oven to 180°c

2.       Line your baking tray with baking paper

3.       Bake your croissants according to the instructions.  I used the frozen Pret croissants.  If your croissants are already baked, then just move on to making the cookie dough

4.       While your croissants cool, make your cookie dough filling

5.       Add the butter and sugars to the mixing bowl and cream together until light and fluffy

6.       Add the flour, baking powder, baking soda and vanilla powder and mix again

7.       Add the water a little at a time until you have a smooth, thick dough.  The vegan butter that you use will determine how much water you need as some are wetter then others

8.       Mix in the chocolate chips to the cookie dough

9.       Carefully cut open your croissants and using approx. a third of the cookie dough, make a little cookie dough patty and squash it inside the croissant

10.   Do the same with another third of cookie dough and add into the second croissant

11.       Take the sliced marshmallows and squash them inside the croissants on top of the cookie dough

12.       Using the remaining third of cookie dough, split it in half and add on top of each croissant.  You can also add extra marshmallows or chocolate chips on top as well

13.       Bake for around 8-10 minutes at 180°c until the cookie dough is lightly golden and the marshmallows have toasted

14.       Eat and enjoy!
