Rocky Road Bites Recipe

An easy, no-bake recipe, perfect for using up leftover Christmas or Easter treats!

This recipe makes eight little rocky road bites and takes only a few minutes to out together. Just melt, mix and leave to set!

This rocky road recipe works perfectly with pretty much any sweet treat mix ins, making it great to use up leftover Christmas or Easter chocolates and sweets.

Makes 8 rocky road bites
Ingredients;
120g vegan chocolate - 'milk' or dark work really well!
55g vegan butter
20g golden syrup
200g-300g mix ins of your choosing - see notes below
You will also need; a microwavable bowl, a spoon, baking paper lined tray
How to make your rocky road bites;
Line your baking tray with baking paper, this will make sure your rocky road does not stick to the tray
Add the chocolate, vegan butter and golden syrup to a microwavable bowl, then heat in small bursts, stirring in between until melted together
Chop your mix ins into small pieces, this will make sure that you get more of a mixture of treats in each bite
Add the mix in pieces to the melted ingredients and mix together
Spoon out approximately eight blobs of mixture on to your baking paper lined tray
Add extra mix in pieces to the top of each rocky road 'blob' to decorate if you'd like
Place the tray in the fridge or freezer until the chocolate has set
Eat and enjoy!

Tips & Tricks!
This recipe works really well with either vegan 'milk' or dark chocolate
Any sweet treat mix ins will taste delicious! I like to make sure that there is at least one crunchy ingredient, like biscuit or pretzel pieces, and one softer ingredient, like marshmallows, so that there is a variety of textures in each rocky road bite
I used Asda giant chocolate buttons in my rocky road and a whole variety of leftover Christmas treat mix ins!






So easy to make, and delicious! I used nomo chocolate, digestives, vegan marshmallows and pretzels. Set in the fridge in a couple of hours - perfect! Thanks for posting Clemie :)
