Pumpkin Waffles Recipe

A thick fluffy waffle recipe with a hint of autumny pumpkin and cinnamon.

Makes around 4 large waffles or 8 pancakes
Ingredients;
200g plain flour
100g pumpkin puree
40g brown sugar
12g baking powder
1 tsp cinnamon - optional
240g plant milk
12g apple cider vinegar
You will also need; a waffle iron or frying pan, a bowl or large jug, a whisk, a spoon
1. Preheat your waffle iron or frying pan on the hob and grease with a little vegan butter or vegetable oil
2. Make your waffle or pancake mixture. In a bowl, roughly whisk together all the dry ingredients, flour, sugar, baking powder and cinnamon
3. Add the wet ingredients, pumpkin puree, plant milk and apple cider vinegar and mix again until your have a smooth batter
4. Once the waffle iron or frying pan is hot, pour in the batter for the first waffle or pancake
5. Cook for 2-4 minutes until the waffle is nice and golden. If you are making pancakes, flip the pancake halfway through to cook the other side
6. Set the waffle aside on a plate and continue until you have used all the batter. This recipe should make around 4 large waffles or 8 pancakes
7. Stack your waffles on your plate and add any toppings. Sliced fruit, cinnamon sugar and maple syrup work really well!
8. Eat and enjoy!
