Pumpkin Spiced Scones Recipe

Makes 12 medium sized scones

 

Ingredients;                    

600g plain flour                                                                                                    

70g caster or granulated sugar                

40g baking powder                      

½ tsp vanilla powder

1 tsp cinnamon

½ tsp ginger

¼ tsp or pinch of nutmeg

¼ tsp or pinch of all spice

¼ tsp or pinch of cloves

110g vegan butter

160g pumpkin puree

150g plant milk               

 

You will also need; a flat baking tray, mixing bowl, scales, medium sized round cutter or a knife to cut into shapes


How to make your scones;

1.       Pre-heat your oven to 160°c and place a sheet of baking paper on your baking tray

2.       Add all the dry ingredients into a large mixing bowl, flour, sugar, baking powder and spices, and roughly mix together

3.       Add the vegan butter and pumpkin puree and use your fingers to crumble everything together into a breadcrumb texture

4.       Add the plant milk and bring the dough together in a large, soft ball

5.       Lightly flour your worktop and use your hand to flatten the ball into a thick rectangle, about 1”-1.5” thick

6.       Use your cutter or a knife to cut out circles of dough and place them on the baking tray

7.       Once you have cut out all the dough, place the baking tray in the oven and bake for 15-20 minutes until lightly golden.  You can also check if they are baked by tapping them underneath, they want to feel firm and hollow sounding

8.       Leave to cool then eat and enjoy!
