Pumpkin Spice Chocolate Chip Muffins Recipe

A gently spiced fluffy pumpkin muffin filled with yummy chocolate chips!

Makes 6 large muffins

 

Ingredients for muffins;

170g plain flour

125g soft brown sugar

4g baking powder

4g baking soda

½ tsp cinnamon

¼ tsp ginger

Pinch of all spice, nutmeg and cloves – or substitute for ½ tsp mixed spice

130g pumpkin puree

100g sunflower oil

80g plant milk

100g dark chocolate chips

 

You will also need; a muffin tin, 6x muffin cases, large mixing bowl, whisk, spoon or ice cream scoop


Method

1.       Pre heat your oven to 150c and line a the muffin tin with the muffin cases

2.       In a large mixing bowl, add the flour, sugar, baking powder, baking soda and spices and use a whisk to mix together

3.       Add the pumpkin puree, oil and plant milk and whisk together to create a smooth batter

4.       Add the majority of the chocolate chips and gently mix through

5.       Using a spoon or ice cream scoop, scoop the mixture evenly into the muffin cases

6.       Add the remaining chocolate chips on top of each muffin

7.       Bake for 20-30 minutes until the muffin top is firm to touch and a cocktail stick comes out clean

8.       Leave to cool before eating!
