Makes 10 small truffles

Ingredients;

1 packet of Pink Panther Wafer Biscuits

100g vegan condensed milk

100g vegan white chocolate

Optional sprinkles for decoration

You will also need; a food processer or large sandwich bag, mixing bowl, baking paper covered tray, small microwavable bowl, spoon, optional piping bag, teaspoon or small ice cream scoop, cocktail sticks or fork

Method;

  1. Add the whole packet of Pink Panther Wafers to your food processer and process until they are all small crumbs. If you do not have a food processor, put the wafers into a thick sandwich bag and use a rolling pin to crush them into small crumbs

  2. Add the condensed milk and mix together to form a thick truffle texture

  3. Cover the bowl and leave in the fridge for at least 45 minutes to chill. This will help you roll smooth and even truffle balls

  4. Use a teaspoon or small ice cream scoop to scoop small balls of dough and use your hands to form them into smooth balls

  5. Place each truffle ball on the baking paper covered tray and put back in the fridge to chill for at least 20 minutes

  6. Melt your white chocolate in the microwave. Heat in very small bursts and stir in between

  7. Press a cocktail stick into each truffle ball and dip each truffle in to the melted chocolate until they are all completely covered

  8. Use the remainder of melted white chocolate to make a drizzle decoration by piping or pouring the chocolate with a small spoon

  9. Add some sprinkles to make the truffles look extra fancy

  10. Put the truffles back in the fridge until the chocolate covering has set, then eat and enjoy!

Tips & Tricks!

  • You could dip these truffles in dark or vegan milk chocolate instead

  • Chilling the truffle mixture before dipping in the chocolate helps the truffles stay on the cocktail stick while you cover it in chocolate and means that the chocolate will set quicker

  • If you don't have any cocktail sticks, you can balance each truffle on a fork and use a spoon to pour the chocolate over the top to coat each one.

  • I used this vegan condensed milk from Nature's Charm; https://amzn.to/3LMLcoY
