No-spread Christmas Spiced Sugar Cookies Recipe

Yummy sugar cookies with a hint of festive spice! Perfectly crisp on the outside with a slightly softer middle.

These cookies are very similar to a spiced shortbread but they do not spread in the oven like shortbread does, which makes them perfect for using with cookie cutters and embossers! They have a slight caramel hint from the brown sugar and you can add whichever spices combination you would like.

This recipes makes around 20 small cookies and they will last around a week in a airtight container or you can freeze them for longer.

Makes 20 small cookies
Cookie ingredients;
250g plain flour
80g soft brown sugar
120g vegan butter
1/4 tsp vanilla powder
1 tsp ground cinnamon
1 tsp ground ginger
1-2 tsp plant milk - if needed
You will also need; a baking tray, baking paper, rolling pin, mixing bowl, whichever cookie cutters and embossers you would like
Method
Pre heat the oven to 180°c
Line your baking tin with baking paper, this will make sure your cookies do not stick to the tray
Make your cookie dough. Add all the dry ingredients to your mixing bowl and roughly mix to combine
Add the vegan butter and use your fingers to rub it into the dry ingredients to make a fine breadcrumb texture
Use your hands to bring the dough together. The dough should feel pliable but firm. If the dough is too dry and crumbly, add a tsp of plant milk and bring it together again. The type of vegan butter you use will determine if you need to add a drop of plant milk, as some vegan butters are wetter than others
Lightly dust your worktop with flour and roll out your dough with the rolling pin to around 8-10mm thick
Cut out and emboss your cookie shapes, then place on the baking paper on the baking tray
Bake for around 12-15 minutes until lightly golden
The cookies will stay soft while they are hot, so leave to cool before removing from the baking tray
Eat and enjoy!

Tips & Tricks!
I used Flora vegan butter when I made these.
This recipe does not require you to chill the cookie dough, but if you are using a really intricate cookie embosser, you may want to put the cookies in the fridge for 20-30minutes before baking them to make sure that the pattern stays really visible once they are baked.
