Lemon Flower Biscuits Recipe

Makes 12 sandwich biscuits
Ingredients for curd;
75g vegan butter
80g granulated sugar
Juice of 1 and ½ lemons
15g cornflour
15g plant milk
Ingredients for biscuits;
250g plain flour
80g icing sugar
125g vegan butter
Zest from 2 lemons
1/2 tbsp lemon juice
You will also need; two baking trays, rolling pin, mixing bowl, small saucepan, whisk, baking paper, circle cookie cutter, flower shaped cookie cutter, mini circle cookie cutter
Method;
1. Start by zesting the two lemons into the large mixing bowl and set aside
2. Make the lemon curd filling by adding the vegan butter and sugar into a small saucepan
3. Juice 1 and ½ lemons and add to the saucepan
4. Melt everything together on a low heat
5. While the saucepan is heating, mix together the plant milk and cornflour in a small bowl and set aside
6. Once everything has melted together in the saucepan and just before the mixture starts to boil, remove from the heat and slowly pour in the cornflour mixture while continuously whisking
7. Whisk the curd mixture until smooth and combined, then put back on the heat and continuously whisk until the curd has become a glossy and thick mixture
8. Pour the curd back into the small bowl and set aside to cool
9. Preheat your oven to 160c and place a piece of baking paper on to each baking tray
10. Make your lemon biscuit dough by adding the flour, sugar and vegan butter to the lemon zest in the large mixing bowl
11. Use your fingers to crumble the mixture together until it looks like small breadcrumbs
12. Juice the remaining ½ of the lemon and add around 1 tbsp of lemon juice to the biscuit dough mixture
13. Bring the dough together with your hands to make a large ball
14. Split the ball of dough into two
15. Flour your worktop and roll out one half of the dough until it is 3-5mm thick
16. Use your flower cutter to cut out 12 flower shapes and place them on one of your baking trays
17. Using the mini circle cutter, cutout the centre of some of your flower shapes, this will let the curd show through and makes the biscuits look like daisies
18. Re-flour your worktop and roll out the second half of dough until it is 3-5mm thick
19. Using the circle cutter, cut out 12 circles and place them on your second baking tray
20. Bake the biscuits for 8-10 minutes. As they are quite thin, they do not take long to bake
21. Once the biscuits and the lemon curd are cool, begin to assemble the sandwich biscuits
22. Place a teaspoon of lemon curd onto one of the circle shapes and use the back of the spoon to cover the biscuit with curd. Place one of the flower shapes on top to make the sandwich
23. Repeat filling each biscuit with curd and sandwiching together
24. Eat and enjoy!
