Another weekend recipe for you all! Flapjack are one of the easiest things to bake, perfect for when you want a quick sweet treat or for making with children. Just melt, stir and bake and you’re done!
Ingredients;
500g oats
125g caster or granulated sugar
250g vegan butter
200g golden syrup
1 lemon (zested & juiced)
Handful of fresh or frozen blueberries
300g white chocolate (I used Moo Free)
Half a batch of vegan lemon curd (our recipe is a few posts back!)
Freeze dried blueberry pieces or fresh blueberries for decoration (I used Honeyberry)
Method;
1. Preheat your oven to 160c
2. Melt the sugar, golden syrup, vegan butter, lemon zest and juice together in a large saucepan until combined
3. Removed from the heat and stir in the oats until completely coated in the syrup mixture
4. Line your baking tin with grease proof paper
5. Spoon in roughly half the flapjack mixture and sprinkle with a handful of blueberries
6. Spoon in the other half of mixture and sprinkle again with blueberries (doing it this way stops the mixture from going a weird purple colour!)
7. Use the back of a spoon to press down and smooth the flapjack mixture
8. Bake for around 20minutes until golden
9. Once the flapjack base has cooled, melt the white chocolate in small bursts in the microwave stirring in between
10. Pour the chocolate over the flapjack and smooth out
11. Place small blobs of lemon curd over the chocolate and use a knife to swirl the chocolate and lemon curd together
12. Decorate by sprinkling with freeze dried blueberry pieces or fresh blueberries
13. Leave in the fridge to set before slicing
14. Eat and enjoy!
