Dubai Pistachio Stuffed Croissant Recipe

Makes two filled croissants

 

Ingredients for Dubai chocolate filling;

A knob of vegan butter

30g kunafa pastry

50g melted white chocolate

2 tbs pistachio butter

 

You will also need;

2x vegan croissants

A little extra melted white chocolate for decoration

A handful of chopped pistachios

 

You will also need; a baking tray, baking paper, mixing bowl, serrated knife, pan, spoon


Method;

1.       Pre heat your oven to 180°c

2.       Line your baking tray with baking paper

3.       Bake your croissants according to the instructions.  I used the frozen Pret croissants.  If your croissants are already baked, then just move on to making the filling

4.       While your croissants cool, make your filling

5.       In a saucepan add a small knob of vegan butter and melt on a medium heat

6.       Add the kunafa pastry to the pan and gently stir until all the pastry turns a toasted golden colour

7.       Tip the pastry into a small mixing bowl

8.       To the warm pastry, add the melted white chocolate and pistachio butter and mix together to make the creamy, crunchy filling

9.       Carefully cut open your croissants and fill both evenly with the pistachio mixture

10.   Drizzle the extra melted white chocolate over the top of the croissant and decorate with a sprinkle of chopped pistachio nuts

11.   Eat and enjoy!
