Date & Walnut Scones Recipe

A fluffy vanilla scone filled with date and walnut pieces

Makes 12 medium sized scones
Ingredients;
600g plain flour
70g soft brown sugar
40g baking powder
1 tsp vanilla powder
110g vegan butter
160g pumpkin puree
300g plant milk
150g chopped dates
150g walnut pieces
You will also need; a flat baking tray, mixing bowl, scales, medium sized round cutter or a knife to cut into shapes
How to make your scones;
1. Pre-heat your oven to 160°c and place a sheet of baking paper on your baking tray
2. Add all the dry ingredients into a large mixing bowl, flour, sugar, baking powder and vanilla, and roughly mix together
3. Add the vegan butter and use your fingers to crumble everything together into a breadcrumb texture
4. Add the dates and walnuts and roughly mix through
5. Add the plant milk and bring the dough together in a large, soft ball
6. Lightly flour your worktop and split your dough into two even balls
7. Use your hands to roughly shape each ball into a thick disk, about 1”-1.5” thick
8. Use a knife to cut each disk into six triangles, so that you have 12 scones altogether and place them on the baking tray
9. Bake for 15-20 minutes until lightly golden. You can also check if they are baked by tapping them underneath, they want to feel firm and hollow sounding
10. Leave to cool then eat and enjoy!
