Cherry Bakewell Rocky Road Recipe

A yummy twist on the classic chocolate rocky road, this recipe includes flaked almonds and glace cherries mixed into a delicious no-bake white chocolate rocky road base.



Rocky road is such a yummy, no-bake easy to make treat! You can just throw all your mix ins into one big bowl and then you're ready to pop everything into your baking tin and leave it to set. The flaked almonds and cherries pieces in this rocky road work so well with the white chocolate and give a little spin on your classic rocky road recipe.



This recipe makes 12 small slices from a 7" x 11" baking tin. Store in a cool, dry place. They are best eaten within four days while they are fresh or you can freeze them for longer.



Makes 12 slices

 

Rocky road ingredients;

100g mini marshmallows + a handful extra for decorating

300g vegan white chocolate

100g vegan butter

45g golden syrup

225g crushed biscuits

100g flaked almonds + a handful extra for decorating

200g halved glace cherries

1 tsp almond extract

 

You will also need; a microwave safe mixing bowl, large spoon, 7" x 11" baking tin, baking paper, sharp knife


How to make your rocky road;

  1. Line your baking tin with baking paper. This will make it much easier to get your rocky road out of the tin

  2. In a large microwavable bowl, add the vegan butter, white chocolate and golden syrup

  3. Heat in short bursts, stirring in between until everything has melted together

  4. Add the almond extract and mix into the melted ingredients

  5. Add the crushed biscuits, flaked almonds, glace cherries and marshmallows and mix everything together

  6. Tip the mixture out into the baking tin and use the back of the spoon to press everything down smoothly

  7. Sprinkle your extra flaked almonds and glace cherries over the top of the rocky road

  8. Pop the tin into the fridge or freezer to set

  9. Once everything is cold and set, use the edges of the baking paper to lift the rocky road out of the tin and slice with a sharp knife

  10. Eat and enjoy!

  • I used crushed oaty biscuits in my rocky road, but any plain-ish biscuits work well, like digestives or rich tea

  • I like to use Moo Free white chocolate as it melts really well

  • You can use a different sized baking tin but your rocky road may come out thinner or thicker depending on the size
