Cherry & Almond Stuffed Croissant Recipe

Like an almond croissant but even better! A gooey almond frangipane and cherry jam filled croissant.




Makes two filled croissants

 

Ingredients for almond frangipane filling;

20g plain flour

25g ground almonds

15g sugar

1/4 tsp baking powder

1 tsp sunflower oil

Tiny splash of almond extract

30g boiling water

 

You will also need;

2x vegan croissants

4 tsp cherry jam

A handful of flaked almonds

A handful of freeze dried cherry pieces


 

You will also need; a baking tray, baking paper, mixing bowl, serrated knife, spoon


Method;

1.       Pre heat your oven to 180°c

2.       Line your baking tray with baking paper

3.       Bake your croissants according to the instructions.  I used the frozen Pret croissants.  If your croissants are already baked, then just move on to making the filling

4.       While your croissants cool, make your filling

5.       In a mixing bowl add together all the frangipane filling ingredients and mix together to make a smooth paste

6.       Carefully cut open your croissants and spread the cherry jam on to one side of the croissant

7.       Spoon half the frangipane mixture onto the other side of the croissant

8.       Sprinkle the cherry pieces and flaked almonds over the top to decorate

9.       Bake for another 10 minutes until the croissants are nicely golden and the flaked almonds have toasted

11.   Eat and enjoy while they are warm!
