Blueberry Cookies Recipe

Naturally purple blueberry mini cookies!

Makes 12-15 small cookies

 

200g frozen blueberries

Juice from 1 lemon

180g plain flour

80g granulated sugar

6g baking powder

75g vegan butter

50g vegan white chocolate chips

Extra fresh berries for decoration

 

You will also need; a flat baking tray, large mixing bowl, small saucepan, whisk, teaspoon or small ice cream scoop, scales


Method;

1.       Make a blueberry concentrate by heating the 200g frozen blueberries and lemon juice in a saucepan on a low-medium heat

2.       Let the blueberries gently simmer for about 20 minutes while stirring occasionally

3.       Carefully pour the hot blueberry mixture into a small bowl and weigh again.  You want the blueberry concentrate to be around 100g, so half of the starting weight.  If the mixture is more than 100g, pour back into the pan and heat again

4.       Set aside to cool

5.       Once the blueberry concentrate is cool, pre heat your oven to 180c and line a baking tray with baking paper

6.       Add the flour, sugar, baking powder, vegan butter and cooled blueberry concentrate to your mixing bowl

7.       Stir together to create a thick dough, then add the white chocolate chips and mix them in

8.       Use a small ice cream scoop or teaspoon to scoop small balls of the cookie dough and place them on your baking tray

9.       Gently press them down slightly to make little patties

10.   Bake for 8-10 minutes

  1. Optional, add some extra decorative blueberries on top by pushing them into the hot cookie
