Black Cocoa Googly Eyes Cookies Recipe

An easy, fun bake for the spooky season! Black cocoa chocolate cookies filled with vegan smarties and edible googly eyes!

Makes 12 cookies
Ingredients;
215g plain flour
100g brown cane sugar
90g white granulated or caster sugar
4g baking powder
2g baking soda
2 tbs black cocoa powder
55g vegan butter
45g vegetable shortening
50g cold water
1x 80g packet of vegan ‘smarties’ or sub for chocolate chips
A packet of vegan edible googly eyes
You will also need; a baking tray, baking paper, a mixing bowl, a spoon or ice cream scoop
Method
1. Pre heat the oven to 180°c
2. Line your baking tray with baking paper, this will make sure your cookies do not stick, and set aside
3. Add the vegan butter, vegetable shortening, brown sugar and granulated sugar to your stand mixer or hand mix using an electric mixer until smooth, light and fluffy
4. Add the flour and cocoa powder, baking powder and baking soda into your bowl
5. Add the cold water and mix again until you have a smooth, thick cookie dough
6. Add the vegan smarties and lightly mix again until incorporated
7. Split the dough into 12 small balls by using a spoon or ice cream scoop
8. Put the balls of dough onto the baking tray making sure they have plenty of space to spread out in the oven
9. Bake for 10-12 minutes until the cookies have spread slightly on the tray
10. Remove from the oven and bang the tray firmly on the worktop. This helps release any trapped air bubbles and makes the cookies have a lovely chewy texture
11. Immediately while the cookies are piping hot, add the googly eyes by carefully pressing them into the hot cookie. Be careful as the tray and cookie dough will be very hot!
12. Leave the cookies on the tray to cool
13. Eat and enjoy!
