Apricot & Macadamia Nut NYC Style Cookies Recipe

Thick NYC style cookies with yummy fruit pieces and crunchy nuts

Makes 6 large cookies
Ingredients for cookies;
240g plain flour
100g soft brown sugar
90g white granulated or caster sugar
4g baking powder
2g baking soda
1 tsp vanilla powder
90g vegan butter
80g chopped apricots
80g macadamia nut pieces
1-2 tbs cold water
You will also need; a baking tray, baking paper, a mixing bowl, a spoon
Method;
1. Line your baking trays with baking paper, this will make sure your cookies do not stick
2. Add the vegan butter, brown sugar and granulated sugar to your mixing and cream until smooth, light and fluffy
3. Add the flour, vanilla powder, baking powder and baking soda and roughly mix
4. Add the cold water a little at a time and mix again until you have a smooth, thick cookie dough. The vegan butter that you use will determine how much water you need as some are much wetter than others
5. Add all the apricots and macadamia nuts and mix until incorporated
6. Split the dough into 6 equal balls. Each ball of dough should weigh roughly 120-140g
7. Put the 6 balls on the baking tray making sure they are spread out and have plenty of space to spread in the oven
8. Put the baking tray with the cookie balls on into the fridge for around 30 minutes to chill. This will help keep the cookies nice and chunky once baked
9. Pre heat the oven to 180°c
10. Bake for 10-12 minutes until the cookies have spread slightly on the tray and are golden brown
11. Remove from the oven and bang the tray firmly on the worktop. This helps release any trapped air bubbles and makes the cookies have a lovely chewy centre
12. Leave the cookies on the tray to cool
13. Eat and enjoy!
